Harvest in Kangaroo Valley started early this year - late March. Picking small and green olives allows us to press our Extra Virgin Olive Oils when their pungency is at its highest.
Having our own olive press, enables us to control every aspect of our production. Pressing green does produces smaller quantities but an exceptional flavour. This year our Signature Range single estate and single varietals include: Picual, Leccino and Corregiola (Millennia).
